Lemon Blueberry Bread

Went to the local SuperStore yesterday. They happened to have blueberries on sale :) So yesterday evening I decided to bake some Lemon Blueberry Bread. I think I'll do muffins tonight.

Lemon Blueberry Bread
1/3 cup butter, melted
1 cup sugar
3 tablespoons lemon juice
2 eggs
1 1/2 cups flour
1 teaspoon baking powder
1/2 teaspoon salt
1/2 cup milk
2 tablespoons grated lemon peel
1 cup fresh or frozen blueberries
  • In a large bowl, cream butter and sugar until light and fluffy. Beat in eggs and lemon juice.
  • Combine the flour, baking powder and salt; stir into egg mixture alternately with milk; beating well after each addition. Fold in lemon peel and blueberries.
  • Pour into a greased 8" x 4" loaf pan. Bake at 350 degrees fro 60-7- minutes or until a tooth pick inserted near the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack.
Yum Yum!! Had some this morning. The lemon isn't to strong and the blueberries are delicious.

  3. I just love lemon and blueberry together. SOOO yummy. I still have some of the berries we picked in the freezer so maybe I need to make some bread with it!

  5. This is on my 'to bake' list when it gets cool enough to turn the oven on. We tried baking cookies in the barbeque with the lid down the other day - not bad but the bottoms were a tad overdone.
