Banana Chocolate Chip Muffins

At our house the muffins are always the JUMBO variety. There is really no point in making "normal" size muffins, than Luke & Logan just have to eat more of them. This is one of their favorites, in fact I know this recipe by heart already :)

1 3/4 cups all purpose flour
1/2 cup granulated sugar
3 tsp. baking powder
1/2 tsp. salt
1/2 cup semi-sweet chocolate chips
1 egg
1/4 cup cooking oil
1/4 cup milk
1 cup mashed bananas (3 medium)

Measure first five dry ingredients into large bowl. Mix thoroughly and make a well in center.

Beat egg until frothy. Mix in oil, milk and bananas. Pour into well. Stir only to moisten. Batter will be lumpy. Fill greased muffin tins 3/4 full. Bake in 400F oven for 20-25 minutes.

This recipe makes 12 "normal" size muffins or 6 Jumbo muffins.

  1. Those two flavors combined really would be yummy!

  2. Ummmm! These sound wonderful! Might have to make some myself. Wish I had one right now.

  3. I've been meaning to make some muffins and now I just may have to try this recipe. Love the addition of the chocolate chips. Chocolate makes anything perfect :)

  4. Too bad I didn't have this last nigh... just made a loaf of banana bread!

  5. These sound and look wonderful - do you think this will make into a loaf instead of muffins. Will go better at my house as a loaf (weird, huh).

    Hugs - Marie

  6. I'm so going to try these minus the chocolate chips bc, believe it or not, I'm not a chocolate person! :-0

  7. You're maming me hungry!!! Those look good!

    Thanks Audrey!

  8. Oh, those look good!! I'll have to try them when the kids come visit otherwise I'll eat them all!!!

  9. Yum ! Banana's our favorite too - I have to try this recipe next !
