TACO PASTA SALAD
2 cups uncooked spiral pasta
1 pound ground beef
1 envelope taco seasoning
3 cups shredded lettuce
2 cups halved cherry tomatoes
1 cup (4 ounces) shredded cheddar cheese
1/2 cup chopped onion
1/2 cup chopped green pepper
1/2 cup Catalina salad dressing
Tortilla chips
Cook pasta according to package directions. Meanwhile, in a large skillet, cook beef over medium heat until no longer pink; drain. Stir in the taco seasoning; cool.
Drain pasta and rinse in cold water; stir into meat mixture. Add the lettuce, tomatoes, cheese, onion, green pepper and dressing; toss to coat. Serve with tortilla chips.

ReplyDeleteI haven't had a taco salad for years. I love the flour tortilla bowl. MMMM! I bet my guys would love this taco salad, too. They really love anything with pasta.
ReplyDeleteOne my favorite salads is broccoli Grape. It's so good! Summer fruit salads are a favorite, too. So refreshing!

ReplyDeleteWe just had tacos tonight I'll have to try this as tacos is one of the few things everyone will eat. My favorite summer salad is a simple tomato/onion/basil I just made the first one of the season and even threw in a little cucumber. Now all of us fight over dipping the italian bread in the dressing - damn kids! LOL
