SLOW-COOKER BEEF STROGANOFF
2 lb. beef stew meat, cut into 1" cubes
10oz. fresh mushrooms, halved
1 onion, chopped
1 clove garlic, minced
1 cup beef broth
2 tsp. paprika
1 tsp. salt
1 cup Sour Cream
2 Tbsp. flour
1 Tbsp. Dijon mustard
1 pkg. (16 oz) egg noodles, uncooked
2 Tbsp. chopped fresh parsley
Place meat, mushrooms, onions and garlic in slow cooker. Add broth, paprika and salt. Cover with lid. Cook on LOW for 7-8 hours (or hon HIGH 5 hours).
Mix sour cream, flour and mustard. Stir into ingredients in slow cooker until blended. Cook, covered, on LOW 15 min. Meanwhile, cook noodles as directed on package.
Drain noodles; place in large serving bowl. Add meat mixture; mix lightly. Sprinkle with parsley.

Wow - I'm going to make it this week. Share the lasagne 'slow cooker' recipe (even if you haven't tried it - you can put a disclaimer on it or something). I need good slow cooker recipes - this make cooking more enjoyable for me (not the usual case).

Sounds wonderful! I have a slow cooker recipe for lasagna and the whole family loves it!
ReplyDeleteI've been looking for some good slow cooker recipes. This one sounds like a winner. My biggest problem is I like to turn it on before I leave for work in the morning and that ends up being a little too long (closer to 12 hours before we get to eat it) If I do anything I almost have to run home at lunch to start it.
